Directions
- Cut the sausages into 1.5 cm thick slices. ≈ 8 min
- Cook them thoroughly, then remove them and set aside.
- Return to the vegetables until they are tender.
- Add the wine and let it simmer until it has almost completely evaporated.
- Add the tomatoes, salt, pepper, oregano, parsley, and sausages. ≈ 3 min
- Let it simmer for 60 minutes, until the sauce is very tender.
- Meanwhile, cook the pasta al dente.
- Drain the pasta, add it to the sauce, and mix well. ≈ 4 min
- In a greased, oven-safe dish, place a third of the pasta and sprinkle with mozzarella or fontina cheese. ≈ 3 min
- Repeat with the remaining pasta, and sprinkle with cheese. ≈ 2 min
- Pour, gently, the beaten eggs over the pasta, then sprinkle with Parmesan cheese. ≈ 2 min
- Place in a preheated oven at 200 °C.
- Let it rest for 5 minutes before serving.
