Baked duck liver, partially cooked
A duck liver, partially cooked and wrapped in aluminum foil, baked in the oven for 8 minutes and then cooled: a simple festive appetizer, served on toast.
This version of seared duck liver requires only a few ingredients: duck liver seasoned and wrapped in aluminum foil in the shape of a large candy, briefly baked in the oven, chilled in the refrigerator, and then allowed to rest. It is served sliced on toasted bread.

Directions
- Carefully remove all nerves from the foie gras, as best as you can. ≈ 3 min
- Add the black pepper and salt. ≈ 3 min
- Pour each a few drops of port or Armagnac and mix everything thoroughly with your hands. ≈ 4 min
- Place a sheet of aluminum foil on the table and put the liver in the center. ≈ 4 min
- Make sure to bring the liver together in the center, shaping it into a small mound. ≈ 3 min
- Fold the aluminum foil and squeeze the ends to form a large, round shape. ≈ 3 min
- Preheat the oven to 150 °C.
- Once it’s nicely seared, place the liver on a plate and cook it for about 8 minutes.
- As soon as it comes out of the oven, let it cool on a separate plate with ice.
- Then, place it in the refrigerator for at least 12 hours.
- Remove the aluminum foil. ≈ 3 min
- To serve, cut into slices and sprinkle with a few grains of coarse salt. ≈ 8 min
- Serve with toasted bread slices.
