A warm summer dessert: bilberry and raspberry, topped with a light mascarpone and lemon cream, baked in the oven, and served immediately.

Directions
- Sort and wash the berries, then allow them to drain. ≈ 2 min
- Divide the fruit evenly among 4 small baking dishes, or a large one. Sprinkle with sugar.
- Separate the egg. Mix the yolk with the mascarpone, 1 tablespoon of powdered sugar, the flour, lemon zest, and lemon juice. Whip the cream and egg whites separately until stiff peaks form, then fold them into the mascarpone mixture. ≈ 10 min
- Spread the cream evenly over the berries. Bake for 10 to 15 minutes in a preheated oven (top and bottom heat: 225 °C, convection heat: 200 °C).
- Once out of the oven, immediately sprinkle with the remaining powdered sugar. Garnish as desired with mint leaves and serve immediately.
