Baba ganoush, eggplant dip with tahini
Baba ganoush from the Middle East: roasted eggplants, blended with tahini, olive oil, and lemon juice, seasoned with garlic, and served with pita bread.
This Middle Eastern eggplant puree is spread on pita bread or served alongside other mezze dishes, such as hummus. The whole eggplants, baked in the oven, give it its smooth texture.
