Directions
- Choose black olives that are in good condition and discard any that have defects. ≈ 3 min
- Place the olives on a straw mat or similar material and expose them to the sun for 4 days. Protect them from moisture or overnight frost. ≈ 3 min
- Place the olives in an airtight container with 100g of fine salt for every 400g of olives. ≈ 3 min
- Shake the container daily for 20 days. Regularly check the bitterness level. ≈ 3 min
- After 20 days, remove the olives and rinse them in water. Dry them and allow them to dry for 2 days in a well-ventilated area. ≈ 2 min
- Prepare glass jars and fill them with the olives. Seal the jars tightly. ≈ 10 min
- Store the olives in a cool, dry place, away from strong odours. Wait one month before enjoying them. ≈ 3 min
