Apple, brick, and hazelnut tart
A flaky pastry filled with marinated apples in brandy, encased in crispy puff pastry, and topped with a hazelnut cream: a cake to be served warm.
The apple tart consists of very thin layers of puff pastry, marinated apples, and a topping of crumbled and caramelized puff pastry. It is best served warm.

Directions
- Peel the apples, cut them into thin slices, and let them soak for 1 hour in water, brandy, and 25g of brown sugar.
- Drain the apples and reserve the maceration juice.
- Grease a springform pan, brush 4 sheets of puff pastry with melted butter, and arrange them in the pan, leaving a 1 cm overhang on the edges. ≈ 3 min
- Sprinkle with ground hazelnuts. ≈ 2 min
- Arrange the apple slices at the bottom of the dish. ≈ 3 min
- Combine the macerated juice with the crème fraîche and egg yolk, then pour over the apples.
- Bake in a preheated oven at 180 °C for 10 minutes.
- Cut the two innermost layers of filo pastry into 2 cm wide strips and flatten them. ≈ 8 min
- Melt the remaining 25g of brown sugar in a small pot with the butter.
- Spread the brick pieces evenly over the pastry base, then pour the sweetened butter over the top. ≈ 3 min
- Bake in the oven for 30 minutes.
- Serve warm, and optionally with a scoop of ice cream. ≈ 10 min
