Directions
- Peel the apples and the ginger, then finely chop the ginger. ≈ 8 min
- Cook the apples and ginger in the two vinegars with the sugar until completely soft or easy to mash.
- Blend into a puree, then add the turmeric, coriander and cumin. Simmer gently, stirring. Season with salt and lemon juice.
- Cut the chili peppers into small dice, and the chives into thin strips about 2-3 mm thick. ≈ 8 min
- Depending on how spicy you want it, add the chili and chives and let simmer, or, for a milder heat, stir them into the puree after taking it off the heat.
- Rinse the jar with boiling water, then pour in the hot chutney and seal immediately.
- Store in a cool place for at least a day.
