Belgian apple cake is a traditional dessert, a combination of apple tart and cake. Small apples from varieties such as Reneta d’or, Elstar, or Jonagold are ideal for this recipe. They can be eaten warm or cold, with whipped cream or ice cream.

Directions
- The apples need to be peeled, then the seeds need to be removed, as well as, if necessary, about half a centimetre from the bottom to create a uniform surface. ≈ 3 min
- The apples are arranged on pieces of puff pastry that are the right size, so that they can be completely enclosed in the pastry. ≈ 3 min
- The center of each apple is filled with a mixture of sugar, spices (cinnamon and nutmeg), and optionally, grapes that have been soaked beforehand or almond paste. ≈ 3 min
- The edges of the dough (or slightly moistened with water if they are dry) are firmly folded around the apple, and the edges are brought together to completely conceal the apple. ≈ 3 min
- Next, you need to pierce the dough in one spot, and if necessary, you can turn the apple over. ≈ 3 min
- Once prepared for cooking, the apples are placed on a buttered baking sheet, or on small aluminum baking dishes, and then coated with beaten egg yolk before being sprinkled with coarse sugar. ≈ 2 min
- They need to be baked for 20 minutes in a preheated oven.
- After baking, the apples in the dough will have a golden-brown color and will be soft on the inside, while still retaining their round shape. ≈ 3 min
