Directions
- Preheat the oven to the temperature specified, then turn it on.
- Line the baking pan with parchment paper, then place the rings inside. ≈ 3 min
- Sift the sugar. ≈ 2 min
- Finely chop the almonds. ≈ 3 min
- Whip the egg whites with about half of the caramel, a pinch of salt, and the vanilla extract until stiff peaks form. ≈ 4 min
- Mix the remaining ingredients with the caramelized almonds.
- Alternate adding the almond and sugar mixture, then the amaretto, gently folding each into the mixture with the whisk. ≈ 3 min
- Finally, add the egg yolks. ≈ 4 min
- Pour: Place the dough in a sealed bag, then drop small balls of dough, about 1 cm in diameter, onto a griddle covered with parchment paper. ≈ 3 min
- Bake the cookies in the preheated oven for about 15 minutes, or until they are golden brown.
- After cooking the amarettini, turn off the oven and let them dry for about 1 hour.
- Allow to cool completely, then consume immediately or follow the storage instructions.
