Amarénas are ideal not only for the Christmas season, but also as a beautiful expression of love. The preparation is a bit complex, but it is rewarded with delicious and flavorful cookies.

Directions

  1. Pour in the flour into a bowl and sift. ≈ 2 min
  2. Dig a hole in the center. ≈ 3 min
  3. Soften the butter. ≈ 3 min
  4. Butter, caramelized sugar, vanilla sugar, and egg yolks, then pour into the mold. ≈ 3 min
  5. Mix all the ingredients together until you have a smooth and consistent dough. ≈ 4 min
  6. Form the dough into a ball. ≈ 10 min
  7. Wrap the food in cling film. ≈ 3 min
  8. Allow to cool for at least 60 minutes.
  9. Pour in the egg whites into a bowl. ≈ 3 min
  10. Whip the egg whites with an electric hand mixer until they reach a light and fluffy consistency. ≈ 4 min
  11. While you are whisking, occasionally caramelize the sugar and add vanilla sugar.
  12. Once the egg whites have been whipped to stiff peaks, add the almond extract and coconut flakes, then gently mix. ≈ 4 min
  13. Preheat the oven.
  14. Roll out the dough on a work surface, making it thin (about 4 mm thick). ≈ 4 min
  15. Cut the parchment paper to the size of the baking dish. ≈ 3 min
  16. Cut heart shapes out of the dough. ≈ 8 min
  17. Recombine the leftover dough and roll it out again. ≈ 3 min
  18. Cut out heart shapes again. ≈ 8 min
  19. Divide the hearts evenly among the parchment paper. ≈ 3 min
  20. Add one tablespoon of whipped cream to each serving. ≈ 3 min
  21. Drain the cherries and let them dry. ≈ 2 min
  22. Cut the cherries into quarters. ≈ 8 min
  23. For each quarter of a bitter cherry, add a pinch of salt. ≈ 3 min
  24. Always place a sheet of parchment paper on a griddle and bake in the oven for about 10 minutes.
