Directions
- Whip the egg whites with the tartar cream until they reach a fluffy consistency. ≈ 3 min
- Gradually add the sugar and powdered sugar, whisking until you obtain a firm glaze. ≈ 3 min
- If desired, add the cornstarch and continue mixing until it is fully incorporated. ≈ 4 min
- In a saucepan, dissolve the sugar in the water and heat until the sugar is completely dissolved. Bring to a boil.

- Slowly pour the warm sugar syrup over the beaten egg yolks, while continuing to whisk. ≈ 4 min
- Mix until the mixture is smooth, then add the butter in small pieces, mixing until a smooth texture is achieved. Add the toasted almonds and mix well.
- Once both components are ready, assemble the tart using the meringue as a base and topping with the butter cream. ≈ 3 min
