Directions
- Preheat the oven to 160 °C (with a fan function).
- Separate the eggs. Whisk the egg yolks with 200g of powdered sugar until you have a smooth, creamy mixture without any lumps. ≈ 4 min
- Remove the vanilla pod and add the vanilla extract, lemon zest, and cinnamon to the dough. Mix gently. ≈ 4 min
- Gradually incorporate the almonds into the dough. ≈ 4 min
- In a separate bowl, whip the egg whites with a pinch of salt until stiff peaks form. ≈ 4 min
- Gently fold the egg white into the remaining batter, mixing gently to create a smooth mixture. ≈ 4 min
- Cover the cake pan with a mixture of oil paint and flour, or line it with parchment paper. Fill the pan with the batter. ≈ 3 min
- Place the mold in the oven and bake for approximately 45 to 55 minutes.
- Before serving, generously sprinkle the cake with the remaining powdered sugar, using a sieve to ensure an even distribution. ≈ 2 min
