Allioli (or aioli) is a Catalan garlic sauce, typical of the local cuisine. The traditional version contains only garlic and olive oil, but you can add mustard, salt, pepper, chili, or egg yolk. Here is the classic recipe, made by hand in a mortar.

Directions

  1. Peel the garlic cloves completely and cut them into quarters. ≈ 8 min
  2. Put the garlic in a mortar and crush it with the pestle along with the salt. Once it is a smooth paste, pour in about 5 ml of oil. ≈ 4 min
  3. Work with the pestle until the garlic has completely absorbed the oil, pressing down on the mixture to crush any remaining pieces. ≈ 4 min
  4. Add the oil little by little, repeating the process and never pouring in too much at once, until you have a thick cream. Allow at least 20 minutes.
