Ajopuchero is a traditional Spanish stew that combines the sweet flavors of red kuri squash and garlic with the texture of beans. It’s perfect for cold evenings.

Directions

  1. The night before, soak the beans in water.
  2. In a large pot, bring the pork pieces, red kuri squash, green beans, broad beans (drained), and chopped sweet potatoes (make a small incision and then force the piece to break apart) to a boil.
  3. After about 20 to 30 minutes, remove the pot, add the egg whites, and continue cooking. Once cooked, remove the broth, which should be set aside. The cooking time indicated is for a quick cooking method; for other types of pots, please refer to the recommended cooking times for beans. Season to your liking.
  4. In a large bowl or mortar, combine four tablespoons of crushed garlic with the prepared broth. Mix well until a smooth and slightly thickened consistency is achieved. Then, add the remaining ingredients and mix again. Serve hot.
