Directions

  1. Peel the vegetables, then place them with the meat in a large pot or Dutch oven filled with water. ≈ 8 min
  2. Place the pot over the heat and let it simmer for at least 1 hour, similar to a beef stew.
  3. Preparing the filling: ≈ 3 min
  4. Mix the flour with the eggs, along with a little milk containing the salt, melted butter, and lard. ≈ 4 min
  5. Add cream. ≈ 3 min
  6. Place the dough in a tightly sealed cloth bag and then submerge it in the pot. ≈ 3 min
  7. Let the mixture cook for at least 2 hours.
  8. Cut or crumble the dough and serve it in hollow plates with one or more pieces of meat, some vegetables, and a generous amount of broth.
  9. Place the meat and a piece of raw bacon in a large pot with cold water, along with a bouquet garni (thyme, bay leaf, parsley), sliced carrots, an onion, juniper berries, and salt. ≈ 3 min
  10. Bring to a boil and cook over low heat for approximately 3 hours.
  11. Two (2) hours before the end of cooking, add the filling. ≈ 3 min
  12. Prepare separately a pork shin with a sausage to cook, as well as the mixed vegetables (leek, turnip, carrot, onion, green cabbage, garlic), and a small pot of apples.
