Directions

  1. Cook the soaked chickpeas in salted water with a drizzle of oil.
  2. Aside from that, with the remaining oil paint, prepare the onion, eggplant, tomatoes, garlic (all peeled and chopped), as well as the mushrooms, cauliflower, and bell pepper, simply chopped. Add a little salt, and once everything is cooked through, mix the vegetables with the chickpeas without stopping their cooking process.
  3. Serve the soup when everything is ready. ≈ 2 min
