Directions
- First, we pour the rice flour into a pan or dish and mix it thoroughly until the moisture in the rice flour disappears and the flour reaches a temperature of 70%.
- Next, we remove the pan from the heat, add a little oil paint, and mix until the oil paint is fully incorporated.
- Next, we gradually add the syrup we prepared earlier, along with vanilla, rose, or cinnamon. ≈ 3 min
- It is important to note that, in the case of individual bakers, women mix the ingredients by hand, while in workshops, they use a kneading machine. ≈ 10 min
- Next, the resulting dough is poured into a previously greased container and then spread out with a rolling pin or other tool to create a smooth surface. ≈ 3 min
- Finally, the zaatar (a spice) is spread in a diamond shape on the dough to make it easier to cut. ≈ 3 min
- The dough can also be baked using natural honey instead of sugar syrup or honey syrup, which gives the dough a slightly darker color. ≈ 3 min
