Seitan is a very protein-rich food, made from wheat flour or other grains such as farro or kamut. The preparation of seitan is not particularly difficult, although it does require a relatively long time, approximately 2.5 hours.

Directions
- Mix the flour with the water to create a very soft dough, working it just enough to form it properly. ≈ 4 min
- Shape the dough into a ball, then place it in a dish with a rim that extends beyond the height of the dough. Then, fill the dish with water until it completely covers the dough. ≈ 10 min
- Let it rest for approximately 50 minutes.
- Carefully open a small channel for water, gently lift the dampened dough, and, holding it between your hands, begin to knead it softly under the water. ≈ 3 min
- Soon, the flour will begin to release its starch, which will drain away with the water, giving it its characteristic white color. After a long period of working the dough, the flour will also start to separate from the water. ≈ 3 min
- When the water is no longer as clear (meaning the starch is starting to deplete), slightly increase the water flow. When only the flour remains, increase the water flow even further. And when, after cutting, the dough is uniform and has no visible holes, it is ready. At the end of the manual process, what remains is the flour. ≈ 3 min
- At this point, pour one liter of water into a pot, add soy sauce, seaweed, and the seitan. ≈ 3 min
- Bring to a boil and simmer for 40 minutes; during the last few minutes of cooking, add the ginger.
- Once cooled, the seitan can be stored in the refrigerator in water and soy sauce for a few days.
