Directions
- Peel the garlic cloves and finely chop them. ≈ 8 min
- Weigh the anchovy fillets. Alternatively, you can also crush them using a mortar and pestle. ≈ 4 min
- Melt the butter in a pan and add the chopped garlic, cooking over low heat without browning it.
- Gently pour in the olive oil and heat slowly, stirring occasionally.
- Add the anchovies and cook over very low heat, stirring constantly, for about 5 minutes, until the mixture becomes creamy. Note: the oil should not boil.
- Keep the sauce warm on a hot plate and serve it at the table. ≈ 2 min
