Vietnamese rice tartlets – Bánh giò
Bánh giò are small rice cakes filled with ground meat, mushrooms, and onion, wrapped in banana leaves, and steamed.
Bánh giò are a traditional Vietnamese pastry. They are made with rice flour, cornstarch, broth, and are filled with ground pork, shiitake mushrooms, onion, and pepper. Steamed, they have a long, upright shape, resembling a folded hand.

Directions
- Mix the rice, cornstarch, 4 cups of water, and 1.5 tablespoons of oil paint in a pot. ≈ 3 min
- Season with salt, sauce, and a small amount of sugar, to your liking (if you are using broth, you do not need to add oil, and you can adjust the seasonings).
- Let the mixture rest for about 20 minutes.
- While the dough is resting, prepare the filling.
- In a bowl, combine all the filling ingredients (except the eggs), adding salt, soy sauce, and pepper until you reach the desired consistency. ≈ 4 min
- Next, return the filling to the pan and cook until it is fully cooked.
- Place the pot on the stove, over low heat (setting 4).
- Keep stirring constantly until the mixture begins to stick slightly to the spoon. ≈ 4 min
- Then, turn off the heat (the mixture should still be liquid). ≈ 3 min
- Continue to stir gently until it thickens and becomes smooth.
