Polenta is a classic dish from Northern Italy, made with cornmeal. It is cooked into a thick porridge in water or broth, and constantly stirred to prevent it from sticking.

Directions

  1. If you don’t have pre-made semolina, grind the corn into semolina. ≈ 3 min
  2. Pour: Gradually add the semolina to the (almost) boiling water (or broth).
  3. Cook for 50 to 60 minutes (15 minutes if using pre-cooked semolina), stirring constantly, until a thick porridge forms.
  4. Then, allow the porridge to cool.
