Taroz is a traditional dish from the Valtellina region. Once a simple dish made with leftover ingredients, it is now often served as an appetizer or side dish in restaurants in the area.

Directions
- Peel the apples and cut them into pieces. Cook them in a pot of boiling water. About halfway through the cooking time, add the peeled and chopped green beans.
- In the meantime, cook the pancetta in a pan.
- Once the vegetables are cooked, pour half of them into a salad bowl. Add the cheese and butter, cut into small pieces. Cover with the remaining vegetables and pancetta. ≈ 3 min
- Mix in a wooden spoon, mashing the vegetables to create a smooth, well-combined puree. Adjust the salt and pepper to taste, then serve hot. ≈ 4 min
