Azerbaijani-style sorrel rolls
Sorrel leaves filled with ground lamb, rice, and fresh herbs, gently simmered and served with yogurt: a traditional Azerbaijani dolma.
Dolma, or stuffed grape leaves, is a quintessential dish in Azerbaijani cuisine. Grape leaves are filled with a mixture of lamb, rice, and herbs, and then slowly simmered.

Directions
- Place the lamb and onion in a food processor. ≈ 3 min
- Add the rice, chopped herbs, salt, and pepper to the mixture, then mix thoroughly. If desired, you can also add soaked chickpeas. ≈ 4 min
- Briefly blanch the fresh sorrel leaves in boiling water.
- Place approximately 25g of filling on each sheet and roll it up. ≈ 3 min
- Place the rolls in a bowl, drizzle with melted butter, and cover with water. ≈ 3 min
- Cook for approximately 1 hour, or until the rice and meat are tender.
- Serve hot, with the yogurt in separate bowls. ≈ 2 min
