Directions

  1. Wash and peel the apples, then cut them into large pieces. Cook them with the garlic in the broth until they are tender, then mash them with an immersion blender or, preferably, a potato masher.
  2. Season with sour cream, herbs, salt, and pepper, then gently poach the snails in the soup.
