Bohkins are small, savory bread rolls filled with cheese, perfect for snacking during aperitifs, breakfast, or afternoon tea. This no-knead dough yields approximately 20 large or 40 small rolls.

Directions

  1. Mix the flour with the baking powder. ≈ 4 min
  2. Add the softened margarine, without melting it, and the sour cream. From this point on, it is best to use a food processor.
  3. Add the cheeses, reserving about 30g of yellow cheese aside, and mix well. ≈ 4 min
  4. Shape the dough into slightly flattened balls and place them on a baking sheet.
  5. Sprinkle each ball with a small amount of the reserved yellow cheese. ≈ 10 min
  6. Bake in a preheated oven at medium heat until the boikos are golden brown.

  • 1 container of sour cream (or 250 ml of milk)
  • One package of soft margarine that had been left out of the refrigerator for half a day.
  • approximately 120g of grated yellow cheese
  • approximately 120g of Bulgarian feta cheese, crumbled
  • 1 package of baking powder
