Directions
- Soak the green broad beans overnight.
- Cook them in cold water that just covers them, with a drizzle of olive oil, a bay leaf, a clove of garlic, and a piece of onion.
- Reduce the sauce by three parts, adding cold water (or cold fish stock).
- Whisk and add the ground saffron. ≈ 3 min
- Rinse the shrimp, removing any hairs and washing them thoroughly. ≈ 8 min
- Add finely chopped garlic and onion to the olive oil.
- Add the shrimp and brown for a few minutes, then stir in the paprika and a splash of Tío Pepe. ≈ 4 min
- Season and serve. ≈ 2 min
- Once the beans are cooked, add the shrimp mixture and one tablespoon of American-style sauce. ≈ 3 min
- Cook together for 10 to 15 minutes, then adjust the seasoning as needed.
- Remove from the heat and let it rest before serving.
