Directions

  1. Soak the crab in 5 liters of water, remove the shells, and filter to keep only the liquid. Pour it into a saucepan, cover tightly, and let it steep for about 12 hours, allowing the broth to develop its flavor.
  2. The next day, return to the allium ascalonicum in the oil paint, cooking them until they soften, then add the crab liquid and bring to a boil.
  3. Place the white parts of the green onions in the broth. Crush the lemongrass stalks and add them as well. Finely chop the remaining lemongrass: place a spoonful of this chopped lemongrass in each bowl.
  4. Cook the bamboo shoots, drain the water, and chop them into pieces. Add the other seasonings, eggs, and bamboo to the broth, then simmer for 40 to 60 minutes, allowing the broth to fully absorb the flavors.
  5. Adjust the seasoning to your liking. Arrange the vermicelli and herbs in the bowls, pour in the broth, and add the chopped lemongrass, green onion, spiky cilantro, and the emptied spring rolls.
  6. Serve with fresh herbs on the side. ≈ 2 min
