Directions
- Warm half a glass of water (using 100 ml from the 200 ml) to the temperature of the back of your hand, add the yeast, and stir until it is completely dissolved.
- Mix the flour together, and then pour in the salt and yeast in the center. Knead, gradually adding the remaining water. ≈ 10 min
- Form a ball, place it in a large bowl, and cover it with a damp cloth. Let it rise for 45 minutes.

- Divide the white dough (with cheese) into five equal portions, and the orange dough (with sobrassada) into four. ≈ 3 min
- Shape the sausages and alternate them in length to form the Catalan shield. ≈ 10 min
- Place the dough in a loaf pan lined with parchment paper (or greased and floured). ≈ 3 min
- Spray it with a little water and decorate it with a few walnut pieces on top, if you like. ≈ 2 min
- Bake in a preheated oven at 160 °C for approximately 45 minutes, or until the bread is golden brown and the base is crispy.
