Directions
- Separate the egg whites from the yolks. Beat the egg whites until stiff peaks form in a clean mixing bowl, adding the sifted powdered sugar just before they are firm. ≈ 10 min
- Add the yolks one at a time, then the warm water. Sift the flour with the yeast and gently fold it into the egg mixture. ≈ 4 min
- Preheat the oven to 180 °C (350 °F). Line a baking sheet with parchment paper and spread the dough evenly. Bake halfway up, using a combination of high and low heat, for about 12 minutes, or until golden brown.
- While you’re doing that, prepare the cinnamon cream. As soon as the biscuits come out of the oven, roll them up and then immediately unroll them.
- Let it cool, spread the cinnamon cream, then roll again and serve.
