- Rub the outside of the large salt cod fillets on both sides. ≈ 3 min
- Carefully wrap the meat in cellophane, sealing it completely: the juices should not escape. You can also use special roasting bags, which are sold in well-stocked supermarkets. ≈ 3 min
- Bake for four to five hours, starting at 180 °C, then reducing the temperature to 120 °C.
- At the covered barbecue, expect a cooking time of six hours.
- You can serve this with a glass of warm maize semolina broth, a quail egg fried, and chopped chives sprinkled on top.
