Directions
- In a bowl, combine the flour, salt, pepper, and ground anise. ≈ 3 min
- Add a glass and a half of water and knead until you have a ball of dough. ≈ 10 min
- Divide the dough into 12 pieces. Roll each into a ball the size of an egg, then stretch it into a rope as thick as your pinky finger. Close it into a ring by pinching the ends together. ≈ 10 min
- Bring salted water to a boil and drop the rings in for 10 minutes. Drain them well, then dry them on a kitchen towel.
- Preheat the oven to 90 °C (about 195 °F).
- Place the rioutes on a baking sheet. Beat the egg with a little milk and brush it over them. ≈ 4 min
- Bake for at least an hour to dry them out.
- Take them out of the oven and sprinkle with anise seeds.
