Directions
- In a large, heavy-bottomed pot, heat the olive oil over medium heat. Add the chopped onions, celery, and carrots, as well as the minced garlic, and cook until the vegetables are softened.
- Add the rice, water, and tomatoes with their juice. Mix well, reduce the heat, and simmer covered for 40 to 45 minutes.
- Rinse and drain the beans, then add them to the rice along with the mint or basil. Continue cooking, covered, for about 5 minutes, until the rice is tender and the beans are heated through. Season with salt and pepper before serving.
