Rice fritters are a typical Sicilian pastry, traditionally made for Saint Joseph’s Day. It is believed that the nuns of the Benedictine order created them in the 16th century.

Directions
- Prepare the same amount of rice and flour. Cook the rice in a large amount of water (a variation involves cooking it in milk, like zeppole), drain it, and let it cool. Once cooled, mix it with the flour and add the yeast.
- Let it rest for a few hours. When the dough is pliable, shape it into finger-sized sticks using a palette and a narrow spatula, and then fry them in plenty of very hot oil.
- Once they are golden, remove them from the oil paint, drain them, and let them cool.
- Serve them chilled, drizzled with honey diluted in a little water and flavored with freshly grated orange zest, then sprinkled with vanilla-flavored powdered sugar. ≈ 2 min
