“Kässpätzle” are a traditional dish from the Swabian and Bavarian regions, made with a dough based on flour and cheese. Here, we will prepare a simple and delicious version for evenings with friends.

Directions

  1. Mix the flour, eggs, salt, and ground nutmeg with the walnuts. Add water gradually to form a thick dough. Let it rest for 30 minutes.
  2. Finely chop the onions and sauté them until they are golden brown. ≈ 8 min
  3. Bring a pot of water to a boil. Gradually pour the dough through a sieve into the boiling water. Use a spoon to scoop out the cooked spätzle as they rise to the surface.
  4. Divide the spätzle into layers in an oven-safe dish, sprinkling grated cheese between each layer. ≈ 3 min
  5. Before serving, top the spätzle with the caramelized onions. Season to taste with pepper and salt.
