Directions
- Clean the quail and cut them in half. Place them in a pot with the oil, then add the peeled and chopped onions, the diced ham and bacon. Once everything is browned, add the peeled, seeded, and chopped tomatoes, the chopped peppers, the eggplant slices, paprika, a little white pepper, and salt. ≈ 8 min
- In a mortar, combine the garlic, some parsley, thyme, and a bouillon cube. Mix with the white wine and pour into a pot. Simmer until the quail are tender.
- Once cooked, arrange the quail on a plate with the vegetables. If there is too much sauce, remove some with a spoon. ≈ 2 min
