Pound cake with fridge fruit
Fruit pound cake: 250 g each of butter, flour and sugar, 4 eggs and whatever fruit is left in the fridge, baked for 45 minutes at 180 °C.
“A pound cake with all the fruit that was sulking in the fridge!”: a zero-waste fruit pound cake, nicely golden and well risen.
The base is as simple as it gets: equal weights of softened butter, flour and sugar, four eggs added one at a time, and a spoonful of baking powder. No need to melt the butter or whip the egg whites.
The slightly tired fruit, cut into pieces, goes in at the end.
