Directions
- The curdled milk is gently heated (but not too much, and not above 37 °C, as this could affect the texture). ≈ 3 min
- Sugar is added to the milk curd. ≈ 3 min
- Thoroughly mix all the ingredients and let them rest for a few minutes before adding the flour.
- Reserve a small amount of flour for the next step. ≈ 3 min
- Let it rest for 30 minutes.
- Mix again and incorporate the remaining flour. ≈ 4 min
- Divide the dough into four equal portions. ≈ 3 min
- Lay each piece out in a circular shape and cut it into 8 pieces. ≈ 8 min
- Place a cheese filling on each slice and roll it up. ≈ 10 min
- Let it rest for another 20 minutes.
- Coat with egg yolk and milk. ≈ 4 min
- Bake in a preheated oven at 200 °C for 7 to 9 minutes.
