The Filipino cannonigo: a fluffy mixture of egg whites whipped into meringue, cooked in a water bath over caramel, and topped with a rum and vanilla cream.
The canonigo is a Filipino dessert, cooked in a bain-marie (water bath) on a bed of caramel. It is served with a rich custard made from egg yolks.

Directions
- Preheat the oven to 160 °C.
- Make a caramel using the 100g of sugar, pour it into two cake molds or a kouglof mold, then butter the edges. Set aside. ≈ 3 min
- For the batter, whip the egg whites until stiff peaks form. ≈ 10 min
- Gently add the sugar and yeast, then whisk until stiff peaks form. ≈ 4 min
- Pour: Pour the mixture into the mold and bake in a water bath for 30 to 40 minutes, or until the cake is set.
- Transfer to a serving dish. ≈ 3 min
- In a double boiler, combine the sugar, egg yolks, and milk, then cook until thickened.
- Add the rum, vanilla, and butter, and cook for a few more minutes.
- Pour: Pour over the cream over the cooked cannelloni. ≈ 3 min
