Directions
- In a small saucepan, melt 200 grams of sugar by adding one tablespoon of water.
- When the color turns brown, but not too dark (otherwise it will burn), turn off the heat and add the almonds. Spread the mixture on a marble slab or in a greased baking dish, then let it cool.
- Meanwhile, whip the cream into soft peaks and mix the remaining 200g of sugar with the 5 egg yolks until you have a consistency that is almost white and fluffy. ≈ 10 min
- The caramel, now cold, breaks apart and turns into small pieces. ≈ 3 min
- Mix all the ingredients together, then pour the mixture into a lightly oiled mold. Place it in the freezer for at least 8 hours.
