Directions
- Separate the yolks from the whites. Whisk the yolks with the sugar until you have a light and fluffy mixture. ≈ 4 min
- Using a wooden spoon, work the mascarpone at room temperature until it forms a smooth cream. Then, incorporate the egg and sugar mixture. ≈ 4 min
- Beat 1 egg white until stiff peaks form, add a pinch of salt, and gently fold it into the cream. ≈ 4 min
- Line the bottom of a dish with a layer of pandoro, about a few centimeters thick, and then pour coffee over it, making sure not to saturate it. ≈ 3 min
- Spread a layer of mascarpone cream evenly over the surface and smooth it out with a spatula. ≈ 4 min
- Add a second layer of coffee-soaked pandoro and cover with the remaining cream. ≈ 3 min
- Sprinkle with cocoa and chocolate shavings. ≈ 2 min
- Store in the refrigerator for at least 12 hours to allow the flavors to meld.
