Directions
- Cut off the inner part of the thistle stem, removing the fine hairs and white down, which is bitter. Cut it to the size of green beans, then cook it in salted water with a little lemon juice.
- Roast the head of Allium sativum (garlic), then rinse it to remove any small, burnt skins. ≈ 2 min
- Place the beans in a pot and cover with water. When most of the water has evaporated, add fresh water.
- Reheat the onion in olive oil. When it is half-cooked, add the sweet paprika and stir to prevent burning. Pour the sofrito over the beans.
- Add the Allium sativum bulb to the pot. ≈ 3 min
- Once the thistle is cooked, add it to the beans and season with salt. ≈ 4 min
- Taste to check the seasoning and cooking. ≈ 2 min
