Directions
- Heat the olive oil in a medium saucepan.
- Once the mixture starts to cook properly, add the chopped onion and garlic, and cook until the onion becomes translucent and the garlic begins to brown.
- It’s important to note that if you combine garlic and onions in a food processor, you will achieve excellent results, especially if you have children at home who generally don’t like the taste of garlic or onions. ≈ 3 min
- Next, add the meat and cook until it is browned on all sides (be sure to turn it over so that it mixes well with the garlic and onion).
- Once the meat is nicely browned, add the cumin, oregano, and continue to blend. ≈ 4 min
- After allowing the mixture to cool for several minutes (2 to 4), add the dry wine, tomato puree, peppers, bay leaf, and red wine (or balsamic vinegar).
- You can also add a few green olives. ≈ 3 min
- Next, add water until it covers the meat. ≈ 3 min
- Once the water begins to boil, reduce the heat, cover, and let it simmer for at least 1 hour to 1 hour and 30 minutes.
- Once the meat is tender, remove the pot and add the apples, along with salt and pepper to taste. ≈ 3 min
- Place the pot back on the stove and continue to simmer until the apples are tender.
