Directions
- In a 10-liter bottle, add 3 tablespoons of caustic soda. Use a wooden straw to help dissolve it. If the water is already heated, allow it to cool to room temperature. Fill the bottle about halfway.
- Place the olives in the bottle and let them sit for 48 hours.
- After 48 hours, observe that the water has turned a dark green color: this indicates that the baking soda has reacted with the olives.
- Return the water to the pot and check for doneness. Allow it to drain until the water that comes out is dark.
- Rinse the olives until the water becomes clear. ≈ 2 min
- In a pot, combine all the ingredients and cook for 30 minutes. Allow to cool, strain, and pour the mixture into the bottle.
- Let the olives marinate for 10 days before consuming them.
