Directions
- Two days before, soak the chickpeas in water, changing the water regularly.
- Cover the lamb pieces with water and let them partially cook. ≈ 3 min
- Add the saffron infusion and mix well. ≈ 4 min
- Once the meat is halfway cooked, add the chickpeas, diced apples, fried onions, tomato paste, turmeric, salt, pepper, oil, and lemon zest. Continue to cook over low heat until the flavors have melded together.
