Directions
- Combine the walnuts and sugar, then add all the other ingredients, except for the cream and chocolate. ≈ 4 min
- The whites should be whipped into stiff peaks (it is best to allow the butter to soften slightly at room temperature, then, before anything else, cut the butter into small pieces and wait for it to soften). ≈ 8 min
- Knead the dough, but not for too long, otherwise you risk overworking it and making the eggs tough.
- Next, let the dough rest in the refrigerator for about thirty minutes.
- Shape the dough into small, slightly flattened balls, and place them in the freezer for about 30 minutes, then in a preheated oven at 180 degrees for about 20 minutes.
- While the cookies are baking, melt the chocolate using a double boiler (i.e., place a pot with a small amount of water on the stove, and inside, place a smaller pot containing the chocolate and very little water).
- Once the chocolate has melted, remove the pot from the heat and add the cream. ≈ 3 min
- Once the cookies are ready, place a small amount of chocolate on one cookie and cover it with another. ≈ 3 min
- Let it cool, and the chocolate will set naturally.
