Directions
- Cut a clean and thoroughly rinsed duck into portions, then season with pepper. ≈ 8 min
- Thoroughly wash the oranges, then blanch them briefly.
- Carefully cut away only the thin, yellow skin using a very sharp knife. ≈ 8 min
- Finely chop the onion. ≈ 8 min
- In a flat pan, heat the oil paint over high heat and apply it to portions of the duck until a golden color is achieved.
- Add the onion, sage, finely chopped orange peel, salt, and pepper. ≈ 2 min
- Cook for a few minutes, stirring gently, then deglaze with wine and let simmer over high heat for a few minutes without a lid.
- Next, pour in the broth, cover the dish, reduce the heat, and let it simmer for about an hour.
- Remove the duck leg, place it on a heat-resistant plate, blend the sauce or sift it, pour into a pot, add the sugar and diced, seedless orange segments. ≈ 4 min
- Mix well, heat until the sugar is dissolved, then brush the duck with the mixture, and place it in a preheated oven for a few minutes.
