An Iranian rice pudding from Mashhad, cooked for a long time with milk, sugar, and cardamom, then steamed and decorated with saffron and pistachio flakes.
Deyscheh is a specialty of Mashhad, typically prepared during the months of Muharram and Safar. It is a thick rice pudding, flavored with cardamom.

Directions
- Soak the rice for two hours, then drain it completely in a sieve.
- Mix it with the milk and cook for two to three hours, stirring constantly, until it boils.
- When the mixture becomes thick, add the sugar and cardamom and stir again until the sugar is completely dissolved. Make sure the mixture doesn’t stick to the bottom of the pan. ≈ 4 min
- Finish by letting the mixture simmer for an hour, like rice, at a very low temperature. Garnish with saffron and chopped pistachios. ≈ 2 min
