Zviti is a fairly spicy dish: it consists of hot peppers, tomatoes, and grilled garlic, baked in the oven, then ground and mixed with fresh cilantro and kisra, a semolina pancake cooked without any fat.

Directions

  1. Roast the chili peppers, tomatoes, and garlic in a very hot oven until the skins are easily removed.
  2. When they are dark, but not burned, place them in a plastic bag and let them cool down; they will then easily peel off.
  3. Remove the seeds, as they have no culinary value. ≈ 3 min
  4. Prepare the pancake: mix the semolina and salt, add the water, and knead for at least half an hour. Form small balls, flatten them, and cook them on both sides over low heat in a clay or cast-iron pan.
  5. In a wooden mortar, crush the hot peppers, tomatoes, garlic, and cilantro. ≈ 4 min
  6. Chop the cake into small pieces, add it to the mortar, and grind everything together. ≈ 3 min

  • 4 red or green chili peppers
  • 4 tomatoes
  • 3 cloves of garlic
  • One small bunch of fresh cilantro
  • A pinch of salt
  • 1 hard, unpainted flatbread (kisra)
  • 250 g of fine semolina
  • Approximately 125 ml of water
  • A pinch of salt
