Homemade Vietnamese-style yogurt
Homemade yogurt made with a yogurt starter, sweetened milk, and warm water. It takes about 7 to 8 hours to ferment in a simple insulated container.
Yogurt is a dairy product produced by the fermentation of milk. This simple version uses a plain yogurt container as a starter culture and an insulated box to maintain the temperature.

Directions
- Dilute the milk with boiling water, according to the desired amount, as you would when preparing a milky drink: for example, 1 part of milk, 2 parts of boiling water, and 1 part of cold water.
- Let the mixture cool slightly. When it is still just warm, add the container of yogurt and stir gently. Too-hot water would kill the yeast.
- Divide the mixture into small pots and place them in the insulated container to keep them warm. ≈ 3 min
- After 7 to 8 hours, the yogurt will have thickened and become slightly tart. Store it in the refrigerator to keep it fresh for longer.
