Rose-flavored lollipops
Homemade nougat: a mixture of cornstarch, sugar, and rose water, cooked into an elastic dough, cut into diamond shapes, and rolled in flour or pistachio.
These rose-scented nougats are made from starch and sugar, cooked until they form a firm, elastic dough. Cut into cubes, they are then coated in flour, pistachios, or coconut.

Directions
- Pour: Add 400 to 600 ml of water to the starch and stir gently to dissolve it thoroughly. Let it rest for 20 to 30 minutes.
- Once the starch has settled, gently remove the water from the top, then add the sugar, 500 ml of water, rose water, and citric acid. ≈ 3 min
- Place the mixture over low heat and stir constantly until it thickens and forms a dense, elastic mass in the center of the pot, similar to a jelly. ≈ 4 min
- Sprinkle flour evenly over the bottom of a baking dish, like a pie plate. Pour in the mixture and smooth the surface. Sprinkle more flour over the top and use your hands to press it down, creating a layer about 1 to 1.5 cm thick. ≈ 2 min
- Once cooled, cut into diamond or square shapes using a knife.
- Coat the entire edge of the nougats with flour, pistachio powder, or coconut, and arrange them in a dish. ≈ 3 min
